Salmon With Basil Mayo – Recipe

Here is a salmon recipe I came across at Taste.com.au.

Ingredients (serves 4)

  • 4 x 180g salmon fillet portions
  • 1/4 cup olive oil
  • 2 tbs chopped flat-leaf parsley
  • 1 tbs finely grated lemon rind

Basil mayo

  • 1/4 cup shredded basil
  • 2/3 cup whole egg mayonnaise
  • 3 tsp Dijon mustard

Method
Combine the oil, lemon rind, parsley, salt and pepper. Place the salmon fillets in a large non-metallic bowl and pour over the marinade, turning to coat. Cover and refrigerate for 5 minutes. Meanwhile, mix together the basil, mustard, mayonnaise and 2 tablespoons water until well combined. Set aside. Heat a barbecue hot plate or grill to hot. Oil the surface well, drain the salmon and place on the barbecue. Cook for 3 minutes on each side or until cooked to your liking. Serve salmon with basil mayonnaise and lemon wedges.

Preparation time is 7 minutes. Cooking time is 6 minutes.

Are You a Guy Looking to Learn How to Cook Salmon?

Even if you’re not a guy, this book might be for you – “The Guy Can’t Cook” by Cindy Chavich. This review at Canada.com mentions a favorite sport among men – fishing:

Going fishing? There are even ideas for that, notes Chavich.

“The only time I’ve ever been salmon fishing, we went out on the West Coast and caught 50 pounds of salmon,” she says. “So, what do guys do? They have to learn how to cook it.”

She has lots of suggestions: Grilled Salmon with Tomato Mango Salsa, Home-smoked Salmon, Candied Salmon on Asian Greens and more.

Although The Guy Can’t Cook is obviously geared toward male readers, anyone that enjoys cooking will find useful tips and recipes, she notes.

Those are just a few of the recipes mentioned in Chavich’s book. Take a look at the article here, and if you’re interested in buying the book, click on the link below!

How to Cook Salmon Perfectly

The question was posed how to cook salmon perfectly. The question was asked here as this person was having difficulty frying salmon in a pan. The answer that was chosen was that it may be better to bake or grill salmon, rather than frying it in a pan. You may agree or disagree with this, but there are two good tips here for the oven and the grill. I will still keep my eye out for salmon recipes in the frying pan, if that’s your thing.

Read these great salmon cooking tips here.

For those of you learning how to cook salmon, an article posted at Projo.com (The Providence Journal) reminds us of the uncertainties of long-term exposure to eating salmon. They state thatscience has not provided a definite answer on the impact to your health. They do know that grilling and baking are better for several reasons and that salmon is an excellent source of omega-3 fatty acids, which lowers the risk of cardiovascular disease and promotes neurological development.

An interesting quote in the article says:

The committee broadly concluded that the potential risks associated with PCBs from seafood are similar to those from meat, such as beef, pork or poultry.

How to Cook Salmon – In Your Dishwasher!

Want to Know How to Cook Salmon – In Your Dishwasher?

I took a double take when I read this alternative method on how to cook salmon. Bob Blumer, the author of “The Surreal Gourmet: Real Food for Pretend Chefs,” answers questions in this Salon.com interview. The question was posed to Blumer if the model of dishwasher made a difference. Blumer answers:

“No, I have poached salmon in almost every make and model. Although the temperatures and duration of the cycle vary with each make, salmon is very forgiving, and a little more or less ‘cooking’ will not affect it greatly.”

I just recently bought a new dishwasher for our newly remodeled kitchen. Now I have one more use for it besides cleaning the dishes!

Go ahead and read the rest of Bob Blumer’s interview along with his savory Salmon dish.
